コーヒーは熱くなかったです。
The coffee was not hot.
The past negative of an い-adjective: drop 「い」 and add 「くなかった」: 「おもしろい」 → 「おもしろくなかった」. Polite forms: 「おもしろくなかったです」 (the most common today) and 「おもしろくありませんでした」 (more traditional).
It is one step: drop 「い」 and add 「くなかった」. Never 「熱いくなかった」 or 「熱くないでした」.
Every form of 「いい」 except the dictionary form uses 「よ」: よくない, よかった, よくなかった.
私は太くなかったよ！
