「さ（感動詞）」 has 2 uses

At the start, urges people to act, or gets yourself going: 「さあ、行こう」, 「さ、仕事に戻るか」.

There we go! Please eat a lot without holding back.

Drawn out as 「さあ」, answers a question with 'I'm not sure': 「さあ、分かりません」.
