Explanation

「～最中に」 means 'right in the middle of' an action in progress, when something unexpected breaks in. The first part is an action in progress: 「会議の最中」, 「食事の最中」, 「スピーチをしている最中」. The second is a sudden event: 「地震が起きた」, 「停電した」, 「電話が鳴った」. It can also end a sentence: 「今、考えている最中だ」 (I'm in the middle of thinking).

Mixed up with

「間に」 just states a stretch of time, with no sense of interruption.

「うちに」 stresses taking advantage of the time.

The first part can't be a long, flat period. Don't say 「×夏休みの最中に」 or 「×一年の最中に」.
